Segal Winery Wild Fermentation Cabernet Sauvignon 2017 Judean Hills, Israel

Dark ruby in color with a short reddish/purplish rim.

Fruity nose of blackberries, blackcurrants, black plums, cloves, earth, wood, light vanilla, dark chocolates, coffee and black pepper.

Medium plus in body with medium plus acidity and a smooth mouthfeel.

Dry on the palate with cherries, raspberries, blueberries, oak, spices, chocolates, peppercorn, dark coffee, tobacco leaf, herbs, graphite and earth.

Medium plus on the finish with fine-grained tannins and tangy raspberries.

This is a very interesting Cabernet Sauvignon from Israel. Showing black fruits on the nose and red fruits on the palate.

Tangy and spicy with a soft mouthfeel. A nice everyday wine.

Needs an hour to open up properly, but good right out of the bottle. This 3 year old is drinking nicely now, and will be good in the next couple of years.

A nice wine to pair with food. I paired it with cheeses and crackers.

Fermented with wild yeast. Aged in French Oak barrels for one year. Kosher and non Mevushal.
